1 (6 lb [2.7 kg]) boneless rib eye

½ cup (120 g) coarsely ground black pepper

½ tsp ground cardamom

1 cup (236 ml) soy sauce

¾ cup (177 ml) white wine vinegar

1 tbsp (15 g) tomato paste

1 tsp (5 g) paprika

½ tsp garlic powder
